Cooking with Spirits: Adding Flavor With Sauces & Marinades

Tired of bland and boring meals at home? Add a burst of flavor and take your cooking to the next level with these five spirit-infused sauces and marinades!

Asian Inspired Whiskey Marinade

This tasty Thai inspired marinade is perfect for ribs, pork tenderloin, chicken, flank steak, and more! Makes enough marinade for five pounds of meat.

·      ¼ cup + 2 Tbsp. Soy Sauce

·      1.4 cup + 2 Tbsp. Saint Lawrence Spirits Rye Knot Whiskey

·      ¼ cup Honey

·      2 Tbsp. Fresh Grated Ginger (or 2.5 tsp. of Dried Ginger)

·      1 ½ tsp. White Pepper

·      1 tsp. Sesame Oil

·      ½ tsp. Cinnamon

·      ¼ tsp. Nutmeg

Whisk ingredients together and marinade meats for four hours or overnight in the refrigerator. When ready to use marinate meat for four hours, or even overnight!

Bourbon Barbecue Sauce

Bourbon and Brown Sugar Barbecue Sauce

This barbecue sauce is the perfect accompaniment for any barbecue! Makes two cups and can be kept for two weeks.

·      1 cup Ketchup

·      ½ cup Saint Lawrence Spirits Captain’s Flask Bourbon

·      3 Tbsp. Brown Sugar

·      3 Tbsp. Molasses

·      3 Tbsp. Apple Cider Vinegar

·      2 Tbsp. Worcestershire Sauce

·      1 Tbsp. Soy Sauce

·      1 Tbsp. Dijon Mustard

·      1 tsp. Onion Powder

·      1 tsp.  Garlic Powder

·      ½ tsp. Crushed Red Pepper

·      ½ tsp. Ground Black Pepper

Place all ingredients into a saucepan and bring to boil over medium heat, stirring occasionally. Once boiling, reduce heat and allow it to simmer until sauce thickens and makes two cups (about ten minutes). Place in airtight container and refrigerate.

Vodka Sauce

This creamy sauce is perfect for any pasta dish. Use it for baked ziti, lasagna, or over spaghetti!

·      3 Tbsp. Olive Oil

·      1 Medium Chopped Onion

·      3 Garlic Cloves, Minced

·      28 oz. can of tomatoes

·      1/3 cup Saint Lawrence Spirits Vodka

·      1 Tbsp. Tomato Paste

·      1 Tbsp. Balsamic Vinegar

·      1 tsp. Kosher Salt

·      ¼ cup chopped fresh basil (or 2 Tbsp. dried basil)

·      ½ to ¾ cup half and half

·      2 Tbsp. Grated Parmesan Cheese

1.     Heat olive oil in a large sauté pan over medium heat. Add onions and garlic and cook until soft (about 3-4 minutes). Add red pepper and cook one minute.

2.     Stir in tomatoes and vodka. Cook 5-7 minutes, stirring occasionally.

3.     Stir in tomato paste, balsamic vinegar, salt and black pepper to taste. Reduce heat to low and allow the sauce to simmer for 20 minutes, or until reduced by half. Stir occasionally.

4.     Once done, transfer mixture to a food processor or blender. Add basil and purée until smooth. Return to pan and stir in half and half—start with ½ cup, but add in more, if desired. Cook 3-4 minutes, or until warmed throughout. Stir in Parmesan cheese and served with your favorite pasta dish!

Lemon & Gin Marinade

This flavorful marinade is ideal for salmon, chicken, pork, and even roasted veggies! Get creative with this super easy marinade that will take your food to the next level!

·      1/3 cup Fresh Lemon Juice

·      1/3 cup Saint Lawrence Spirits Anchored American Gin

·      1 tsp. Dried Oregano

·      1 ½ tsp. Salt

·      1 ½  tsp. Sugar

·      ½ cup vegetable oil

Whisk together lemon juice, gin, oregano, sugar, salt and pepper. Slowly add the oil in a small stream while whisking, until it becomes emulsified. Marinates three pounds of meat or fish.

Sweet Dessert Whiskey Sauce

This simple and delicious whiskey sauce is perfect atop ice cream, bread pudding, spice cake, and many other delectable treats! Use your favorite Bourbon, and add as little or as much as you’d like to taste!

·      ¼ cup Softened Butter (1/2 stick)

·      ½ cup Sugar

·      3 Tbsp. Whipping Cream

·      2 Tbsp. Saint Lawrence Spirits Kentucky Son Straight Bourbon Whiskey

·      Pinch of Salt

Melt butter in saucepan over medium heat. Whisk in remaining ingredients. Simmer until thickened, whisking often (4-5 minutes). Cool slightly and enjoy!
